Cream of Quinoa

Since quinoa is a seed, it is paleo!  This makes a wonderful grain-free breakfast that is like grain (and I didn't think I liked quinoa before this--the blending really made a difference for me).  This is pure comfort food for the paleo dieter--and it's simple (my motto)!

Cream of Quinoa

Makes 1 serving

1 cup coconut milk or other milk substitute
1/2 cup quinoa
1/8 tsp salt
1 tbsp butter
Brown sugar (or sugar substitute with molasses) to taste
Frozen or fresh berries or other fruit
Chopped nuts (I used almonds)

Mix together milk, quinoa, salt, and sugar and bring to boil in a saucepan. Let simmer with lid on for 10 minutes, stirring occasionally.  For a creamier, non-seed-like consistency, blend in a blender with the butter before it is very thick and then finish cooking.  (You know it is done when it is pudding thick.)  Transfer to bowl and top or stir in chopped nuts and fruit.  Enjoy!
